These beautiful cupcakes have a super-moist chocolate base topped with a perfectly sweet creamy strawberry frosting made from real strawberries (in the form of strawberry puree, freeze-dried strawberries, or both).

  • Stand mixer fitted with a paddle attachment or a hand mixer with a whisk attachment
  • Measuring cup and measuring spoons (or a kitchen scale, if you prefer weighing)
  • Wire rack or cooling rack for cooling your cupcakes
  • Cupcake corer or small paring knife (optional if you want to fill the center of each cupcake)
  • Baking sheet lined with parchment paper (if you choose to dip fresh strawberries in chocolate or make chocolate-covered strawberries for garnish)

  • White chocolate (optional for a two-tone drizzle or decoration)

Step-by-Step Instructions

Making the Cupcakes

  • Preheat your oven to 350°F (175°C).
  • Line a 12-cup muffin tin with cupcake liners.In a large bowl, sift together:
    • 133 g all-purpose flour
    • 2 tsp baking powder
    • 53 g cocoa powder
    • 220 g sugar
    • 1/8 tsp salt
  • In a stand mixer or separate bowl (or using a hand mixer):
  • Cream 133 g room-temperature butter at medium-high speed for 5 minutes, scraping the bowl as needed.
  • Reduce the mixer speed to low and add the sifted dry ingredients. Mix until everything is very well incorporated, about 2 minutes. Then add:
    • 3 room-temperature eggs
    •  200 ml heavy cream
    • 2 tsp vanilla bean paste.
    • Mix just until you have a smooth batter (avoid overmixing).

Fill & Bake

  • Fill each cupcake liner about two-thirds full.
  • Bake for 20–24 minutes, or until a toothpick inserted in the center comes out with minimal crumbs.
  • Cool completely on a wire rack before frosting.

Add a Surprise Center (Optional)

  • For a fun surprise in the center of your cupcake, consider coring out the center of each cupcake with a cupcake corer or small paring knife.
  • You can spoon in a bit of strawberry jam, chocolate fudge filling, or even more strawberry puree. Replace the cupcake “cap” before frosting.

Making the Strawberry Frosting

  • Ensure your mascarpone, heavy cream, and freeze-dried strawberries are all ready measured. If you’re using strawberry puree, cook it down to thicken, then cool it completely.
  • In a clean large bowl (or using your stand mixer with a whisk attachment), add chilled mascarpone, chilled heavy whipping cream, powdered sugar, and a dash of vanilla extract.
  • Start on low speed to avoid powdered sugar clouds.

Incorporate the Strawberry Flavor

  • Once the mixture starts to thicken, add your strawberry powder (from freeze-dried strawberries) or strawberry puree. This is where you get that gorgeous pink hue and real strawberry flavor!
  • Increase to medium-high speed until you achieve stiff peaks. Be careful not to overwhip, or the mascarpone can curdle.

Taste Test

  • If you want a sweeter frosting, add a bit more powdered sugar. If you need more tang, a few fresh berries blitzed in a food processor (and strained) can help.

Frost the Cupcakes

  • Once the cupcakes are fully cooled and chilld- Fill a piping bag fitted with a large star tip. Swirl the strawberry frosting onto the top of the cupcakes. Admire your beautiful cupcakes for a moment before garnishing.

Garnishing

Melt chocolate chips (or chopped chocolate) with a tiny bit of vegetable oil for a glossy finish.
Dip fresh strawberries (washed and patted dry) into the melted chocolate. Set them on a baking sheet lined with parchment paper until the chocolate hardens.
Gently place a chocolate-covered strawberry on top of each frosted cupcake.

Ingredients

For the Cupcakes

  • 133 g salted butter room temperature

Chocolate Fudge Filling

  • 125 g salted butter
  • 200 g semi-sweet or dark chocolate chopped
  • 25 g powdered sugar
  • 150 g heavy cream

Strawberry Frosting

  • 320 ml heavy cream cold
  • 200 g mascarpone cheese cold
  • 8-10 powdered sugar adjust to taste
  • 2 tsp vanilla bean paste or vanilla extract
  • 2 –3 tbsp freeze-dried strawberry powder or strawberry jam

Chocolate Drizzle

  • 100 g chopped chocolate or chocolate chips
  • 1 tsp vegetable oil or coconut oil optional, for easier drizzling

Instructions

How to Make the Cupcakes

  • Preheat the oven: Set it to 350°F (175°C).
  • Combine dry ingredients: In a large mixing bowl, sift together flour, baking powder, cocoa powder, sugar, and salt. Set aside.
  • Cream the butter: In a stand mixer, cream the room-temperature butter on medium-high speed for about 5 minutes, scraping down the sides as needed.
  • Add dry ingredients: Lower the mixer speed and add the sifted dry ingredients to the butter. Mix on low speed for about 1 minute until just combined. Scrape down the sides of the bowl.
  • Incorporate wet ingredients: Add the eggs, heavy cream, and vanilla bean paste. Increase the mixer speed to medium and mix for 1 minute. Scrape down the bowl and mix again for another minute to ensure everything is well combined.
  • Portion the batter: Using a large cookie scoop (or spoon), fill cupcake liners about two-thirds full.
  • Bake: Bake in the preheated oven for 20–24 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Let the cupcakes cool completely on a wire rack before filling and frosting.

Chocolate Fudge Filling

  • Melt ingredients: Combine the chopped chocolate, butter, powdered sugar, and heavy cream in a microwave-safe dish. Microwave on high in 20-second intervals, stirring continuously until everything is melted and smooth.
  • Cool: Transfer the melted mixture to a piping bag and let it cool. Refrigerate for about 1 hour, or until it thickens to a fudgy consistency.

Strawberry Frosting

  • Prep cold ingredients: Make sure your heavy cream and mascarpone are thoroughly chilled.
  • Whip: In a large mixing bowl, combine the cold mascarpone cheese, heavy cream, powdered sugar, and vanilla. Beat on high speed for about 4–5 minutes, until the mixture is thick and holds stiff peaks.
  • Add strawberry flavor: Gently fold in the freeze-dried strawberry powder (or jam) until the frosting is pink and evenly flavored. Taste and adjust sweetness or strawberry intensity as desired.

Chocolate Drizzle

  • Melt chocolate: In a microwave-safe bowl or using a double boiler, melt the chocolate (and optional oil) in short bursts, stirring in between until smooth.
  • Cool slightly: Let the melted chocolate cool just a bit so it’s still pourable but won’t melt your frosting on contact.
  • You can use this to dip FRESH strawberries as well!

Assembly

  • Core the cupcakes: Once the cupcakes are completely cool, use a cupcake corer or small knife to remove the center of each cupcake.
  • Fill with fudge: Spoon or pipe a small dollop of the chilled chocolate fudge into the center of each cupcake. Place the little “cupcake cap” back on top.
  • Frost: Transfer your strawberry frosting into a piping bag fitted with a large star tip (or your favorite piping tip). Generously swirl the frosting onto each cupcake.
  • Drizzle: Using a small spoon or a squeeze bottle, drizzle the melted chocolate on top of the strawberry frosting.
