Homemade Lady Fingers

I originally made these homemade lady fingers for my Tiramisu Brownies, and honestly, they were worth every extra minute of effort. They are such a lovely little recipe to have on hand. Store-bought ladyfingers are convenient and will absolutely work in a pinch, but NOTHING beats homemade ladyfingers because they have the softest, lightest, freshest sponge cake texture that makes a HUGE flavor impact!

Ladyfingers are essentially delicate sponge cookies made from whipped egg whites, egg yolks, sugar, flour, and vanilla. They are often used in a classic tiramisu, but they can also be used for trifles, layered desserts, ice cream desserts, or tucked away in the cookie jar for a sweet little treat. They are soft, fluffy, and so much better than anything I’ve found at the grocery store!

What are Lady fingers?

Lady fingers, also called ladyfinger cookies, sponge fingers, or sponge cookies, are light sponge cake-style cookies made from whipped eggs, sugar, flour, and vanilla.

They are most often used in tiramisu because they soak up coffee beautifully while still holding their shape. They also work well in any layered desserts!

A good ladyfinger should feel light and airy with a delicate, crispy exterior. Once brushed with coffee, syrup, or another soak, it softens into the perfect sponge layer.

Homemade or Store Bought?

You can absolutely use store-bought ladyfingers when a recipe calls for them. They are convenient and easy to find at many grocery stores.

But homemade lady fingers are just so special.

They are softer, fresher, and more delicate than store-bought cookies. They have a true sponge cake texture that makes layered desserts feel extra light and tender.

For my Tiramisu Brownies, I prefer homemade ladyfingers because they create a softer tiramisu layer between the rich brownie base and creamy mascarpone topping.

Yes, they take a little more effort. But they bake in less time than you might think, and they store so well that you can make them ahead.

Equipment You’ll Need

  • Electric mixer or stand mixer
  • Whisk attachment
  • Large mixing bowl
  • Separate bowl for whipping egg whites
  • Rubber spatula
  • Fine-mesh sieve
  • Piping bag or large pastry bag
  • Plain tube or 1/2-inch round piping tip
  • Prepared baking sheet or sheet pan
  • Parchment paper
  • Small bowl for powdered sugar
  • Airtight container for storage

Your Shopping List

  • Eggs: This recipe uses whole eggs, but the egg whites and egg yolks are separated. The egg yolks are whipped with part of the sugar, while the egg whites are whipped separately to stiff peaks. Use room temperature eggs for the best volume.
  • Granulated Sugar : The sugar is divided between the egg yolk mixture and the egg whites. Half of the sugar goes into the yolks, and the remaining sugar is slowly added to the whites.

  • Powdered Sugar: Powdered sugar is dusted over the piped ladyfinger batter before baking. Dusting twice helps create the classic crackly top and lightly crispy exterior.

How to Make Homemade Lady Fingers

Step 1: Prepare Your Baking Sheets

Preheat your oven to 325 degrees F. Line two baking sheets with parchment paper.

Fit a piping bag or large pastry bag with a plain tube or 1/2-inch round piping tip.

If you want very even lady fingers, draw parallel lines on the parchment paper as guides, then flip the parchment over before piping.

Step 2: Whip the Egg Yolks

This usually takes about 4 to 5 minutes.

In the bowl of a stand mixer fitted with the whisk attachment, beat the egg yolks with half of the sugar on medium-high speed until pale, thick, and falling in ribbons.

Mix in the LorAnn Oils Reserve Organic Madagascar Bourbon Vanilla Bean Paste.

Step 3: Whip the Egg Whites

In a clean separate bowl, whip the egg whites with a pinch of salt until foamy.

Gradually add the remaining sugar and continue whipping until stiff peaks form. The egg whites should be glossy and hold a tall peak when the whisk is lifted.

This is what gives homemade ladyfingers their light, airy texture.

Step 4: Fold the Batter

Fold one-third of the whipped egg whites into the egg yolk mixture to lighten it.

Then fold in the rest of the egg whites in two additions with a rubber spatula. Use a gentle hand so you do not deflate the batter.

Sift the cake flour over the egg mixture and fold just until combined. Stop once the dry ingredients disappear.

Step 5: Pipe the Lady Fingers

Transfer the ladyfinger batter to the prepared piping bag.

Pipe fingers onto the prepared baking sheet, spacing them about 1 inch apart. Each one should be about 3 inches long.

Try to pipe them tall and rounded instead of flat. This helps them bake into soft, fluffy sponge fingers.

Step 6: Dust and Bake

Dust the piped ladyfingers generously with powdered sugar.

Wait 5 minutes, then dust again. This double dusting helps create the delicate crust on top.

Bake for 12 to 15 minutes, or until the ladyfingers are lightly golden brown around the edges, firm to the touch, and slightly crackled on top.

Step 7: Cool Completely

Let the ladyfingers cool completely on the pan before moving them.

They will be delicate while warm, but they firm up as they cool.


Use Room Temperature Eggs

separate the eggs while they are cold and leave them out to come to room temp. Room-temperature eggs whip to a higher volume than cold eggs. More volume means lighter ladyfingers.

Use a Clean Bowl for Egg Whites

Any trace of fat can keep egg whites from whipping properly. Make sure your bowl and whisk attachment are clean and dry.

Do Not Overmix

Once you add the flour mixture, fold only until the dry ingredients disappear. Overmixing will deflate the batter.

Pipe Them Tall

Pipe the batter into rounded fingers instead of flat strips. This gives the cookies a better texture.

Dust Twice With Powdered Sugar

The double dusting helps create that classic ladyfinger top and gives the cookies a lightly crisp exterior.

Let Them Cool Before Moving

Warm ladyfingers are fragile. Let them cool completely before storing or using them in a dessert.

Troubleshooting Homemade Lady Fingers

Why Are My Ladyfingers Flat?

Flat ladyfingers usually mean the egg whites were not whipped enough, or the batter was overmixed. Make sure the whites reach stiff peaks and fold gently.

Why Is My Batter Runny?

Runny batter usually means the eggs were deflated while folding. Use a light hand and stop mixing as soon as the flour disappears.

Why Do My Ladyfingers Taste Eggy?

Can I Use Vanilla Extract?

  • 4 large eggs separated, room temperature
  • 100 g granulated sugar 1/2 cup, divided
  • 1 teaspoon LorAnn Oils Reserve Organic Madagascar Bourbon Vanilla Bean Paste
  • 90 g cake flour 3/4 cup, sifted
  • Pinch of fine salt
  • Powdered sugar for dusting

  • In a clean separate bowl, whip the egg whites with a pinch of salt until foamy.
  • Gradually add the remaining sugar, 50 g, and whip until stiff, glossy peaks form.
  • Fold one-third of the whipped egg whites into the egg yolk mixture to lighten it.
  • Fold in the remaining egg whites in two additions, using a rubber spatula.
  • Sift the cake flour over the egg mixture and fold gently until just combined.
  • Transfer the ladyfinger batter to the prepared piping bag.
  • Pipe 3-inch fingers onto the prepared baking sheet, spacing them about 1 inch apart.
  • Dust generously with powdered sugar. Let sit for 5 minutes, then dust again.
  • Bake for 12 to 15 minutes, rotating the pans halfway through, until lightly golden brown, firm to the touch, and slightly crackled on top.
  • Cool completely on the pan before moving.
  • Use right away, refrigerate in an airtight container, or freeze for later.

Notes

Use room temperature eggs for the best volume.
Do not overmix once the flour is added. The batter should stay light and airy.
