Equipment Needed

  • Baking sheet or oven-safe dish  (for roasting the berries)
  • Parchment paper
  • Small bowl (for mixing the roasted berries with syrup)
  • Tall glasses
  • Spoon
  • Straw (optional for serving)

Shopping List

  • Fresh or Frozen Berries: Raspberries and blackberries are what I use, but fresh strawberries or fresh blueberries also work best.
  • Torani Puremade Diamond Syrup: Essential for its sparkling vanilla flavor.
  • Vanilla Ice Cream: Use a rich, creamy vanilla ice cream for the best results.
  • Sparkling Water or Lemon-Lime Soda: For fizz and sparkle. Club soda works as a neutral option too.
  • Optional Garnishes: Sugared berries, mint sprigs, lemon slices, or a dash of cinnamon for a festive touch.

How to Make Diamond Berry Ice Cream Float

1. Roast the Berries

Preheat your oven to 400°F.

Spread 1/2 cup of fresh raspberries (or a mix of berries) on a parchment-lined baking sheet. Roast for 8-10 minutes, or until soft and slightly caramelized. Let cool slightly.

2. Add the Diamond Syrup

Transfer the roasted berries to a small bowl. Drizzle with 1 oz (2 Tbsp) of Torani Diamond Syrup and gently mash the berries to create a juicy, textured layer.

3. Layer the Float

Spoon the roasted berry mixture into the bottom of a tall glass. Add 1 scoop of vanilla ice-cream, letting it sit gently on the berries.

4. Top with Sparkle

Slowly pour 4-6 oz of sparkling water or carbonated water over the ice cream, filling the glass. The fizz will create a frothy, festive effect.

5. Garnish and Serve

Add sugared berries, a sprig of mint, or a sprinkle of lemon zest for an elegant finish. Serve immediately with a straw and spoon.

Variations to Try

  • Mixed Berry Float: Combine roasted raspberries, blueberries, and strawberries together for a colorful medley of flavors.
  • Sparkling Cider Twist: Replace sparkling water with sparkling cider for a richer, apple-infused flavor.
  • Coconut Cream Float: Swap the vanilla ice cream for a scoop of coconut ice cream for a tropical vibe.
  • Blueberry Float: For a burst of berry flavor, use roasted blueberries and pair them with blueberry ice cream.
  • Kid-Friendly Fun: Add gummy sharks or edible glitter to the float for a playful, themed touch.
