I have always loved tiramisu. It is one of those desserts that feels nostalgic and luxurious at the same time, and when it is done well, it is completely unforgettable!

So when I started thinking about elevating it even more, a tiramisu layer cake felt like the perfect direction. It keeps everything I love about the traditional dessert, yet turns it into a layered cake that feels elegant, impressive, and truly BEAUTIFUL! The perfect celebration cake that EVERYONE will love!

Over the summer, I traveled to Valencia, Spain, and had some of the best tiramisu I have ever tasted in my life (and yes, I have been to Italy!!).

It was from the cutest little Italian restaurant tucked into a quiet street. Completely unexpected. Completely delightful. I still think about it.

The mascarpone cream was light but rich, the coffee flavor was bold without being bitter, and the balance was perfect. It made a huge impact on me.

Since then, I have been recreating tiramisu-inspired desserts left and right! I kept thinking how fun it would be to turn that flavor into a tiramisu layer cake. Something sliceable. Something that feels like a bakery cake but tastes like that little Italian restaurant in Valencia!


This is that cake.

Step-by-Step Instructions

Make the Vanilla Cake Layers

  • Preheat your oven and prepare your cake pan by lining each of your inch pans with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine your dry ingredients, including cake flour, sugar, baking powder, and salt. Mix on low speed until everything is evenly incorporated.
  • Add the butter and mix until the mixture resembles fine sand. This reverse creaming method creates a stable vanilla cake with minimal doming and beautiful straight edges.
  • In a separate bowl, gently warm the heavy cream until slightly above room temperature. Whisk together the cream, egg whites, and vanilla extract.
  • With the mixer on low speed, slowly stream the wet ingredients into the dry ingredients. Increase to medium speed and mix just until smooth. You do not want to incorporate too much air into the cake batter. This is not an airy sponge cake. It is a structured, tender base that absorbs coffee syrup perfectly.
  • Divide the batter evenly between prepared pans. Bake until the centers spring back and the edges of the cake pull slightly away from the sides.
  • Let the layers cool briefly in the cake pan.
  • And if desired, carefully remove the golden-brown sugar crust on top of the cake to improve coffee absorption!
  • Once the crust is removed, flip the cake over inside the pan leave on the counter and cover with plastic wrap until the espresso soak is ready

Make the Coffee Syrup

  • In a medium bowl, combine strong coffee or instant espresso powder dissolved in hot water with sugar. Stir until dissolved. Add coffee liqueur or marsala wine if desired.
  • Allow the syrup to cool before using.
  • Next – use a pastry brush to soak each of the first cake layers and the top layer. You want an even layer of moisture, not saturation.
  • Wrap again and leave on the counter until you are ready to frost.

Make the Creamy Mascarpone Frosting

  • In the bowl of a stand mixer fitted with the whisk attachment, add cold mascarpone. Whip just until smooth.
  • Slowly stream in very cold heavy cream and whip until soft peaks form. Add powdered sugar and vanilla extract. Continue mixing until medium peaks form.
  • Stop mixing as soon as the frosting is fluffy and stable. Overmixing can cause the mascarpone cream to become grainy.
  • The texture should be light, smooth, and spreadable with an offset spatula.

Assemble the Tiramisu Cake

  • Spread an even layer of mascarpone frosting over the first cake layer using an offset spatula.
  • Repeat with the second layer.
  • Place the top layer of cake upside down.
  • Apply a thin crumb coat over the entire cake and chill until set. This ensures smooth sides and clean, straight edges. and chill for 20 minutes.
  • Once chilled, apply the final coat of frosting. Use a bench scraper to refine the edges of the cake and smooth the top of the cake.
  • Finish with a generous dusting of cocoa powder.

• Remove the thin sugar crust from the top of the cake while it is still slightly warm for a smoother finish. It should peel back from the crumb while it’s still warm, revealing the soft, tender crumb underneath!

• Wrap warm cake layers tightly in plastic wrap to lock in moisture.

• Always use cold mascarpone and cold heavy cream for the most stable frosting.

• Mix on low speed when incorporating powdered sugar.

• Do not overwhip past medium peaks.

• Let cake layers cool completely before assembling.

Ingredients

VANILLA BEAN CAKE LAYERS

  • 565 g granulated sugar
  • 405 g cake flour
  • 24 g baking powder 2 tablespoons
  • ¼ teaspoon fine salt
  • 225 g salted butter cool and pliable (1 cup / 2 sticks)
  • 495 g heavy cream gently warmed to 70F (2 cups + 1 tablespoon)
  • 280 g egg whites room temperature (about 8–9 large egg whites )
  • 1-2 tablespoons vanilla bean paste

COFEE SYRUP

  • 240 g strong coffee 1 cup
  • 30 g granulated sugar 2 tablespoons
  • 2 tablespoons coffee liqueur optional

MASCARPONE FROSTING

  • 16 oz cold mascarpone
  • 360 g heavy cream very cold (1½ cups)
  • 360 g powdered sugar 3 cups, sifted
  • 2 teaspoons vanilla extract or vanilla bean paste
  • Pinch of salt

Instructions

Make the Cake

  • Preheat oven to 325°F (163°C). Grease and line three 8-inch cake pans with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment,
    combine sugar (565 g),
    cake flour (405 g),
    baking powder (24 g),
    and salt .
    Mix on low speed until combined.
  • Add butter (225 g) and mix until the mixture resembles fine sand.
  • In a separate bowl, whisk together
    warmed heavy cream (495 g),
    egg whites (280 g),
    and vanilla bean paste (1- 2 tablespoons).
  • With the mixer on low speed, slowly stream the wet ingredients into the dry ingredients. Increase to medium speed and mix until smooth, about 2 minutes.
  • Divide batter evenly between pans, about 665–670 g per pan.
  • Bake for 35–42 minutes, or until the centers spring back and the internal temperature reaches 205–210°F.
  • Cool in pans for 10 minutes. While slightly warm, gently remove the thin sugar crust from the tops using a butter knife or toothpick. Wrap layers tightly in plastic wrap and cool completely on a wire rack.

Make the Coffee syrup

  • Stir sugar (30 g) into warm coffee (240 g) until dissolved.
  • Add coffee liqueur if using (2 tablespoons / 30 g).
  • Cool completely before using.

Make the Mascarpone Frosting

  • In the bowl of a stand mixer fitted with the whisk attachment, whip cold mascarpone (454 g) just until smooth.
  • Slowly stream in cold heavy cream (360 g) and whip until soft peaks form.
  • Add powdered sugar (360 g), vanilla (2 tsp), and a pinch of salt. Continue whipping until medium peaks form.
    Do not overmix.

Assemble

  • Place the first cake layer on a cake board. Brush generously with coffee syrup.
  • Spread an even layer of mascarpone frosting on top.
  • Repeat with the second layer.
  • Place the final layer on top and lightly brush with syrup.
  • Apply a thin crumb coat and chill for 30 minutes.
  • Frost with remaining mascarpone frosting and smooth the sides. Finish with a dusting of cocoa powder.
